INGREDIENTS:
- 1 cup quinoa
- 1 cup tinned chickpeas
- 1 tablespoon Super Ghee (use any Super Ghee)
- 1medium onion, chopped
- 4 tomato, chopped
- 1 teaspoon cumin
- 1 green chilli, chopped
- 1 bay leaf
- 1 teaspoon ginger garlic paste
- 2 teaspoon dried fenugreek leaves (optional)
- 2 teaspoon coriander powder
- ½ teaspoon smoked paprika
- ¼ teaspoon turmeric powder
- ½ teaspoon garam masala powder
- 2 cups water
- Salt, as per taste
- 1 teaspoon coriander, chopped for serving
INSTRUCTIONS:
- Heat ghee in the pressure cooker (you can use instant pot as well).
- Add cumin seeds. Let it splutter. Add onions and sauté for a minute.
- Now add ginger garlic paste and sauté for few seconds.
- Add all spices and tomatoes and sauté until tomatoes breaks down and turn mushy.
- Wash the quinoa properly and add it into pressure cooker. Cook for a minute and add water.
- Secure the lid. Pressure cook this for 2 whistles. Let the pressure cooker cools down completely.
- Open the lid, fluff them up with fork.
- Add coriander and enjoy.
